We had storms yesterday so dragged out the slow-cooker instead. Weather is looking good for a smoke-up on Cup day.
In the meantime, lamb shanks and red wine!
My wife is away this weekend so I’ve taken the opportunity to invite a few mates around. Went to the Queen Vic Markets and picked up 6kg of pork ribs:

One of my mates has brought over his Weber Smokey Mountain so now mine isn’t so lonely:
Fired up the chimney starter at 4am this morning and got them both cranked:
And we filled up the fridge with 2 x 18L kegs. Should be a good day…..

Check out this wood fire pizza oven at my mate’s house. A few logs and this thing stayed at cooking temperature for hours. We were pumping out a pizza every 6 minutes, and they were delicious!

I planned a lamb roast low and slow for Sunday but when i got it out the freezer realised it was 6 pieces of Lamb rump. Not really a good cut for low and slow so we did our first ever direct heat cook!
Turned out okay.
Think we will do ribs next weekend.

Sydney, actually. We were visiting our friends on a recent trip back home. They have an awesome outside kitchen / BBQ setup, and this pizza oven was a recent addition.

We struggled with the temps today. It hit 300deg after they were wrapped but was still moist.
