The mythology teaches that attractive things may lead to an undesirable end - and more directly to teach young men to beware that women have two sides (like the mermaids tail).
Starbucks may have chosen her since it was established in Seattle in the 70’s.
Seattle is a major seaport so they went with a nautical theme and the 70’s were very sexy.
The prudes that people are; forced change to the Starbucks logo because adults in the western world are ashamed and embarrassed about sex.
Starbucks probably weren’t happy to be aligned with an evil temptress so they cropped the logo.
